Love at First Bite
The first time I tried a lox sandwich, I had just moved to Rhode Island. I was new to the state, still finding my footing, and had landed a job at a place in Wakefield called Bagelz. I did not know it then, but that job would change the way I thought about bagels forever.
Up to this time I never had lox on a bagel, I didn't even know that combination existed. My first encounter was when my boss at the time recommended I try a Nova Scotia Lox on an everything bagel. I layered the silky smoked salmon across the surface with cream cheese, tomato, and onion. That first bite stopped me, I was in love. The saltiness of the salmon against the chewy seed covered crust was something I had never experienced before. Simple ingredients, extraordinary together. I understood immediately what my boss already knew.

There is something about an everything bagel that feels complete. The seeds, the salt, the slight crunch giving way to a soft and chewy interior. It is humble and extraordinary at the same time. That first lox sandwich taught me that the quality of the bread beneath everything else is what makes or breaks a meal.
